Mock the system date for the tenant with the given external ID.

Since Livble's functionality is highly date-dependent,
this endpoint gives you full control over what date the system operates on for a given tenant.

⚠️ The mocked date must not be earlier than the real current UTC date.
You can freely adjust it forward or backward relative to a previously mocked value,
as long as it does not go before today's actual date.
